The Tartufo stracciatella combines fine white chocolate with 52% dark chocolate. Hazelnuts from Piedmont are found in the Tartufi stracciatella as fine pieces and paste.
At Antica Torroneria Piemontese, only high-quality Piedmontese hazelnuts of the slightly sweet "La Tonda Gentile delle Langhe" variety are used. The crumbly texture of the Tartufi stracciatella melts in the mouth, paired with the crisp bite of the dark chocolate.
The term "stracciatella" (Italian for "to tear") actually refers to a type of ice cream that consists primarily of milk ice cream sprinkled with fine, irregular pieces of chocolate.
Stracciatella ice cream was invented in 1961 by Enrico Panattoni. Panattoni was the owner of the La Marianna restaurant in Bergamo, northern Italy.
